Anna Maria’s Italian Chicken

Julianne Marie is my just-over-one-year-old Goddaughter and namesake. She is perfectly perfect.

Julianne?was born just shy of?nine months after her father, Bryan, (a?fellow copywriter at Fire Mountain Gems), lovingly prepared?and served the following recipe for?his beautiful?wife, Chelsea, on their wedding anniversary.?

This may very well be a recipe for Love; but it is also, most?certainly, a recipe to love. Delicioso!

Anna Maria?s Italiano Chicken

4 Chicken Breasts

Olive Oil

4-6 Garlic Cloves-chopped or crushed

1 Medium White Onion-chopped

Crushed Tomatoes-2 cans

Fresh Basil 6-8 leaves lightly chopped

Salt and Pepper

Dash Oregano

White wine-1 cup

Parmesan Cheese-1/4 c.

Fettuccine or Linguine Pasta

Lightly brown chicken breasts on both sides. Transfer to a baking dish. Saut? garlic and onion. Add crushed tomatoes with juice. Simmer for 15-25 minutes. Add white wine. Simmer another 5-10 minutes. Season with salt and pepper to taste. Add oregano. Toss in basil and parmesan cheese. Pour over chicken breasts. Cover with foil. Bake at 350 degrees for 35-45 minutes.

Cook pasta al dente. Pile in center of large flat dish or platter. Place chicken breasts around the pasta and pour sauce over pasta.

Serve with crusty bread, olive oil or butter, a tossed green salad and, don’t forget, lots of love. Maybe some candles, too.
